Description

These easy homemade apple fritter bites are a quick summer dessert featuring warm cinnamon, sweet apple chunks, and a simple glaze. Perfect for picnics, parties, or cozy treats, they deliver bakery-style flavor in bite-sized form.

  • 2 medium apples, peeled, cored, and diced small (about 1 1/2 cups, 180g)
  • 1 cup (120g) all-purpose flour (or gluten-free blend)
  • 1/4 cup (50g) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup (80ml) milk (whole, 2%, or almond milk)
  • 2 large eggs, room temperature
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • Vegetable oil or canola oil (enough for 2-inch depth in pan)
  • 1 cup (120g) powdered sugar
  • 23 tablespoons milk (for glaze)
  • 1/4 teaspoon vanilla extract (for glaze)

Instructions

  1. Peel, core, and dice apples into small, even pieces (about 1/4-inch cubes). Blot with paper towel if extra juicy.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, beat eggs, then add milk, melted butter, and vanilla extract.
  4. Pour wet ingredients into dry, stirring until just combined. Batter should be thick but scoopable.
  5. Fold in diced apples until evenly distributed.
  6. Pour oil into a heavy-bottomed pot to about 2 inches deep. Heat to 350°F (175°C).
  7. Scoop batter using a small cookie scoop or tablespoon and carefully drop into hot oil. Fry in batches for 2-3 minutes per side, until golden brown and puffed. Flip halfway through.
  8. Remove fritter bites with a slotted spoon or spider strainer and place on paper towels or wire rack.
  9. While bites cool slightly, whisk together powdered sugar, 2-3 tablespoons milk, and vanilla extract for glaze. Adjust milk for desired thickness.
  10. Dip each fritter bite into glaze, letting excess drip off. Place back on rack to set.
  11. Let bites cool for at least 5 minutes before serving. Enjoy warm.

Notes

Use crisp apples for best texture. For gluten-free, use a GF flour blend. Batter consistency is key—thick but scoopable. Fry in small batches for best results. Glaze while bites are warm but not hot. Can be baked in mini muffin tins at 375°F for 13-15 minutes for a lighter version.
