- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 1/2 cup buttermilk
- 1 cup panko breadcrumbs
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon Sriracha (adjust to taste)
- 1 teaspoon lime juice
- 2 cups cooked rice (white or brown)
- 1 cup shredded cabbage
- 1 cup diced cucumbers
- 1/2 cup shredded carrots
- Chopped green onions for garnish
- Sesame seeds for garnish
Instructions
- In one bowl, season your chicken pieces with salt and pepper. In a second bowl, pour the buttermilk. In a third bowl, place the flour. Dip each chicken piece into the flour, then the buttermilk, and finally coat it in panko breadcrumbs.
- Heat your skillet over medium heat and add a bit of oil (about 1/4 inch deep). Once hot, carefully add the breaded chicken pieces, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side until golden brown and crispy.
- While the chicken is cooking, whisk together the mayonnaise, sweet chili sauce, Sriracha, and lime juice in a small bowl. Taste and adjust the heat level to your liking.
- Once the chicken is done, start with a base of cooked rice, then layer on the shredded cabbage, diced cucumbers, and shredded carrots. Top it off with the crispy chicken pieces.
- Generously drizzle the bang bang sauce over the top of the chicken and garnish with chopped green onions and sesame seeds. Serve immediately or store in meal prep containers for later.
Notes
If you want to make it gluten-free, substitute the all-purpose flour with a gluten-free blend and use gluten-free breadcrumbs. You can also bake the chicken in the oven for a healthier option.
