Description

Decadent homemade brownie cookies sandwiched with safe-to-eat cookie dough. The ultimate lunch treat for chocolate lovers!


Ingredients

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup (60g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup (90g) mini chocolate chips
  • 1/2 cup (113g) unsalted butter, softened (for dough)
  • 1/2 cup (100g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract (for dough)
  • 1 cup (120g) all-purpose flour, heat-treated
  • 1/2 tsp salt
  • 3/4 cup (135g) mini chocolate chips (for dough)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, whisk together melted butter and sugar until glossy. Beat in eggs and vanilla.
  3. Sift in flour, cocoa powder, salt, and baking powder. Fold until just combined. Stir in chocolate chips.
  4. Scoop tablespoon-sized balls onto baking sheet, spacing 2 inches apart. Bake 10–12 minutes, until edges are set and centers look slightly underbaked. Cool completely.
  5. For cookie dough, beat softened butter and sugars until light and fluffy. Mix in milk and vanilla.
  6. Mix in heat-treated flour and salt. Stir in chocolate chips.
  7. Once cookies are cool, spread or pipe a generous layer of cookie dough on the flat side of half the cookies. Top with remaining cookies to form sandwiches.
  8. Optional: Chill assembled cookies in the fridge for 10 minutes to set the filling.

Notes

For best results, chill the assembled cookies for 10 minutes before serving. To heat-treat flour, bake it at 350°F for 5 minutes and let cool. For dairy-free, use vegan butter and plant milk. Sprinkle flaky sea salt on top for extra flavor.
