Description

These Chicken Alfredo Lasagna Roll Ups are a comforting and indulgent dish that combines the satisfaction of lasagna with the fun of roll-ups, perfect for family dinners or impressing guests.


Ingredients

  • 9 lasagna noodles, cooked and drained
  • 2 cups cooked chicken, shredded
  • 1 cup ricotta cheese
  • 1 ½ cups mozzarella cheese, shredded
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • ½ cup unsalted butter
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced

Instructions

  1. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel.
  2. In a mixing bowl, combine the shredded chicken, ricotta cheese, 1 cup of mozzarella cheese, ½ cup of Parmesan cheese, Italian seasoning, salt, and pepper. Mix until well combined.
  3. In a skillet over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute. Stir in the heavy cream and bring to a simmer. Gradually whisk in the Parmesan cheese until the sauce is smooth. Season with salt and pepper to taste.
  4. Spread a thin layer of alfredo sauce on the bottom of the baking dish. Take one noodle and spread about 2-3 tablespoons of the chicken filling along its length. Carefully roll it up and place it seam-side down in the baking dish. Repeat with the remaining noodles.
  5. Pour the remaining alfredo sauce over the rolled lasagna and sprinkle with the remaining mozzarella cheese.
  6. Preheat your oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  7. Let the roll-ups sit for a few minutes before serving. Garnish with fresh parsley or basil if desired!

Notes

Feel free to substitute ingredients based on what you have on hand. For a lighter version, you can use low-fat ricotta or Greek yogurt.
