- 8 ounces pasta (rotini recommended)
- 1 cup frozen peas, thawed
- 6 slices bacon, cooked and chopped
- 1 cup mayonnaise
- ½ cup sour cream
- 1 tablespoon mustard
- Salt & pepper to taste
- 2 green onions, finely chopped (optional)
- Fresh herbs (parsley or dill) for garnish
Instructions
- In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking.
- While the pasta is cooking, place the frozen peas in a small bowl and let them thaw.
- In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove from heat, drain on paper towels, and chop into bite-sized pieces.
- In a separate mixing bowl, combine the mayonnaise, sour cream, and mustard. Whisk until smooth. Season with salt and pepper to taste.
- Once the pasta is done, drain it in a colander and rinse under cold water to cool it down. In a large mixing bowl, add the cooled pasta, peas, bacon, and green onions. Pour the dressing over the top and mix well to combine.
- Sample your salad and adjust seasoning as needed. Add more salt, pepper, or mustard if desired.
- Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
Notes
Allowing the salad to chill in the fridge enhances the flavors. Feel free to experiment with different add-ins.
