Ingredients

  • 2 pounds baby potatoes, halved
  • 200g feta cheese, crumbled or block
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary or thyme, chopped
  • Salt to taste
  • Freshly cracked pepper to taste
  • Juice of half a lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes. If using larger potatoes, chop them into roughly equal-sized pieces.
  3. In a mixing bowl, combine the halved potatoes, minced garlic, olive oil, salt, pepper, and chopped herbs. Toss well until the potatoes are evenly coated.
  4. Spread the potatoes out in a single layer on your baking tray, cut side down.
  5. Crumble the feta cheese over the potatoes, ensuring it’s evenly distributed.
  6. Place the tray in the oven and bake for 30-35 minutes, or until the potatoes are golden brown and fork-tender.
  7. Once done, remove from the oven and drizzle with fresh lemon juice.
