- 2 pounds baby potatoes, halved
- 200g feta cheese, crumbled or block
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary or thyme, chopped
- Salt to taste
- Freshly cracked pepper to taste
- Juice of half a lemon
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes. If using larger potatoes, chop them into roughly equal-sized pieces.
- In a mixing bowl, combine the halved potatoes, minced garlic, olive oil, salt, pepper, and chopped herbs. Toss well until the potatoes are evenly coated.
- Spread the potatoes out in a single layer on your baking tray, cut side down.
- Crumble the feta cheese over the potatoes, ensuring it’s evenly distributed.
- Place the tray in the oven and bake for 30-35 minutes, or until the potatoes are golden brown and fork-tender.
- Once done, remove from the oven and drizzle with fresh lemon juice.
- Transfer to a serving dish, and enjoy warm!
