- 8 oz (225 g) pasta of your choice
- 2 medium onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup beef or vegetable broth
- 1 teaspoon dried thyme
- 1 cup shredded Gruyère or Swiss cheese
- Salt & pepper to taste
Instructions
- In a large pot of salted boiling water, cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet over medium heat, melt the butter and olive oil. Add the sliced onions and a pinch of salt. Cook, stirring frequently, until the onions are golden brown and caramelized, about 15-20 minutes.
- Once the onions are caramelized, add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Carefully pour in the beef or vegetable broth, scraping up any bits stuck to the bottom of the pan. Stir in the thyme.
- Add the cooked pasta to the skillet, tossing to combine everything well. Let it simmer for about 3-5 minutes, allowing the flavors to meld.
- Sprinkle the shredded cheese over the pasta. Cover the skillet with a lid and let it sit for 2-3 minutes, or until the cheese is melted and bubbly.
- Taste and adjust seasoning with salt and pepper as needed.
