- 2 large eggs, room temperature
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 cup fresh strawberries, finely chopped
- 1/4 cup granulated sugar (for topping)
- 1 tablespoon ground cinnamon
- 2 tablespoons unsalted butter, melted (for brushing)
- 4 oz cream cheese (for glaze)
- 1/2 cup powdered sugar (for glaze)
- 2 tablespoons milk (or more for desired consistency)
Instructions
- In a small bowl, combine warm milk and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Add the melted butter, eggs, and the activated yeast mixture. Mix until a dough forms.
- Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. If using a stand mixer, use the dough hook attachment and mix on low for about 5 minutes.
- Place the dough in a greased bowl, cover with plastic wrap or a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
- In a medium bowl, mix the softened cream cheese, powdered sugar, vanilla extract, and chopped strawberries until smooth.
- Once risen, punch down the dough and transfer it to a floured surface. Roll it out into a large rectangle, about 1/4 inch thick.
- Spread the cheesecake filling evenly over the dough. In a small bowl, mix together the sugar and cinnamon for the topping, then sprinkle it generously over the filling.
- Starting from one long side, carefully roll the dough into a log. Pinch the seam to seal it, then slice it into 12 equal pieces.
- Place the rolls in a greased 9×13-inch baking dish, cover, and let them rise for about 30 minutes.
- Preheat your oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until golden brown and cooked through.
- While the rolls are baking, mix the softened cream cheese, powdered sugar, and milk until smooth. Adjust the milk for desired consistency.
- Once baked, let the rolls cool slightly before drizzling the cream cheese glaze over the top. Serve warm and enjoy!
Notes
Use fresh and ripe strawberries for the best flavor. If using frozen strawberries, thaw and drain them well before using.
