- 1 teaspoon vanilla extract
- 1 ½ cups (180g) all-purpose flour
- ½ cup (60g) cornstarch
- 1 teaspoon lemon zest
- 1 cup (150g) fresh strawberries, finely chopped
- Additional powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- In a large mixing bowl, beat the softened butter and powdered sugar together until light and fluffy, about 2-3 minutes.
- Mix in the vanilla extract until well combined.
- In another bowl, whisk together the flour, cornstarch, and lemon zest.
- Gradually add the dry mixture into the butter mixture, mixing just until incorporated.
- Gently fold in the finely chopped strawberries until evenly distributed throughout the dough.
- Using a small cookie scoop or your hands, form small balls of dough (about 1 inch in diameter) and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. Dust with additional powdered sugar before serving.
Notes
Use ripe, sweet strawberries for the best flavor. If using frozen strawberries, thaw and drain them well to avoid excess moisture.
