- Start by preparing your chicken. Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
- Set up your dredging station. In the first shallow bowl, add the flour and season with salt and pepper. In the second bowl, beat the eggs, and in the third bowl, combine the breadcrumbs and grated Parmesan cheese.
- Coat each chicken breast first in the flour, shaking off excess, then dip into the egg, and finally coat with the breadcrumb mixture, pressing gently to adhere the crumbs.
- Heat a generous amount of olive oil in the skillet over medium heat. You’ll want enough oil to cover the bottom of the pan (about 1/4 inch deep).
- Once the oil is hot, gently place the chicken in the skillet. Avoid overcrowding the pan; you may need to work in batches. Cook for about 4-5 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- Transfer the cooked chicken to a plate lined with paper towels to drain excess oil while you prepare the sauce.
- In the same skillet, lower the heat and add the butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes, until fragrant and slightly golden but not burnt.
- Remove the skillet from heat and stir in the lemon zest and chopped parsley.
