Description
This Easy Moo Shu Chicken is a comforting dish perfect for chilly winter evenings, combining sautéed vegetables and tender chicken for a hearty yet light meal. It’s quick to prepare and ideal for busy weeknights or cozy gatherings.

- 1 pound boneless, skinless chicken breast, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 cups shredded cabbage (green or napa)
- 1 cup shiitake mushrooms, sliced (or your choice of mushrooms)
- 1 cup carrots, julienned
- 1 red bell pepper, sliced
- 2 green onions, chopped
- 2 tablespoons vegetable oil
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 3 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 8–10 Chinese pancakes or tortillas for serving
Instructions
- In a bowl, combine the sliced chicken with soy sauce and cornstarch. Let it marinate for about 10 minutes while you prep the veggies.
- Wash and slice all your vegetables. Make sure to julienne the carrots and slice the mushrooms and bell peppers thinly to ensure even cooking.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
- Add the marinated chicken to the skillet. Stir-fry for about 5-7 minutes or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.
- In the same skillet, add the shredded cabbage, mushrooms, carrots, and bell pepper. Stir-fry for 3-4 minutes until the veggies are slightly tender but still crisp.
- Return the chicken to the skillet and mix with the vegetables. Pour in the hoisin sauce, rice vinegar, and sesame oil, stirring to combine. Cook for an additional 2-3 minutes to allow the flavors to meld.
- Warm the pancakes or tortillas in a separate skillet. Once everything is ready, serve the Moo Shu Chicken mixture in the pancakes, and enjoy!
Notes
If you prefer tofu, feel free to swap out the chicken. You can also add other veggies like snap peas or broccoli for extra crunch.
