Description

  • 1 cup (200g) brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/2 cups (315g) all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup (90g) quick oats
  • 1/2 cup (60g) powdered sugar (for glaze)
  • 2 tablespoons pure maple syrup (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat oven to 350°F (177°C). Line 2 baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy (2-3 minutes).
  3. Beat in eggs and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, cinnamon, nutmeg, salt, and baking soda.
  5. Add dry ingredients to the wet mixture in batches, mixing just until combined.
  6. Fold in oats by hand. The dough will be thick.
  7. Scoop 2-tablespoon mounds of dough onto prepared baking sheets, spacing 2 inches apart.
  8. Bake for 11-13 minutes, until edges are golden but centers look slightly underbaked.
  9. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. For the glaze, whisk together powdered sugar, maple syrup, and enough milk to reach a drizzling consistency.
  11. Drizzle glaze over cooled cookies and let set before serving.

Notes

For gluten-free cookies, substitute all-purpose flour with a 1:1 gluten-free blend. Dairy-free margarine and flax eggs can be used for dietary needs, though texture may vary. Add-ins like chopped pecans, raisins, or mini chocolate chips can be mixed in for variety. Let cookies cool fully before glazing for best results.
