- 12 lasagna noodles (uncooked)
- 1 1/2 lbs large shrimp, peeled and deveined
- 1/2 cup unsalted butter
- 8 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/4 cup dry white wine or chicken broth
- 1/4 cup fresh parsley, chopped
- 2 cups ricotta cheese
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 3 cups shredded mozzarella cheese
- 1 1/2 cups heavy cream
- Salt and black pepper, to taste
- Red pepper flakes, optional
Instructions
- Preheat oven to 375°F (190°C). Butter a 9×13-inch baking dish.
- Cook lasagna noodles in salted water until al dente. Drain and lay flat.
- Melt 1/2 cup butter in a large skillet over medium heat. Add garlic and sauté until fragrant.
- Add shrimp, cook until just pink (2-3 min). Remove shrimp, reserve juices.
- Deglaze pan with white wine, lemon juice, and zest. Simmer 2 min.
- Mix ricotta, egg, Parmesan, half the parsley, a pinch of salt and pepper in a bowl.
- Slice shrimp in half lengthwise (reserve a few whole for top).
- To assemble: spread 1/3 cream on bottom. Layer noodles, ricotta, shrimp, mozzarella. Repeat layers, finishing with mozzarella.
- Pour reserved garlic butter and pan juices over top. Arrange whole shrimp, sprinkle with parsley & red pepper flakes.
- Cover with foil, bake 30 min. Uncover, bake 20 min until bubbly and golden.
- Let rest 15 min before slicing. Serve warm, garnished with lemon wedges.
Notes
For best results, use wild-caught shrimp and fresh lemon. You can substitute chicken broth for wine and use gluten-free noodles or dairy-free cheese as needed. Let the lasagna rest before slicing for cleaner portions. Garnish with extra parsley and lemon wedges for a fresh finish.
