- 4 (6-ounce) halibut fillets, skinless
- 1/2 cup grated Parmesan cheese
- 1/3 cup Panko breadcrumbs
- 2 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Lemon wedges, for serving
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Pat halibut fillets dry with paper towels and season with salt and pepper on both sides.
- In a small bowl, mix together Parmesan, Panko, garlic, parsley, and lemon zest.
- Drizzle melted butter and olive oil over the crumb mixture and stir until evenly moistened.
- Arrange halibut fillets on the prepared sheet, leaving space between each.
- Spoon the Parmesan mixture evenly over the top of each fillet, pressing gently to adhere.
- Bake for 12-15 minutes, or until the crust is golden and fish flakes easily with a fork.
- Serve immediately with fresh lemon wedges.
Notes
Pat the halibut fillets dry for the crispiest crust. Substitute cod or haddock if halibut is unavailable. For gluten-free, use gluten-free breadcrumbs or almond flour. Add a pinch of chili flakes for heat. Serve with a simple salad or roasted vegetables.
