Ingredients

  • 1 pound boneless, skinless chicken tenders
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. In a mixing bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, pepper, and paprika. Whisk until well blended.
  2. Add the chicken tenders to the bowl, ensuring they’re fully coated in the marinade. Cover and refrigerate for at least 20 minutes (or up to 2 hours for deeper flavor).
  3. Heat a large skillet over medium-high heat. Add a splash of olive oil to the skillet.
  4. Once the oil is hot, remove the chicken tenders from the marinade, letting any excess drip off. Place them in the skillet without overcrowding (you may need to do this in batches).
  5. Cook the chicken tenders for 4-5 minutes on each side, until they’re golden brown and cooked through (internal temperature should reach 165°F).
  6. Once cooked, remove the tenders from the skillet and let them rest for a few minutes before serving.

Notes

Letting the chicken rest after cooking helps keep it juicy.
