Ingredients
- 2 1/4 cups (280g) all-purpose flour, plus more for dusting
- 1 packet (2 1/4 tsp) active dry yeast
- 1 tbsp granulated sugar
- 3/4 cup (180ml) warm water (about 110°F)
- 2 tbsp unsalted butter, melted
- 1 tsp salt
- 24 cocktail sausages (mini hot dogs, about 12oz/340g)
- 1/4 cup (60g) baking soda
- 6 cups (1.4L) water
- 1 large egg, beaten
- Coarse sea salt or pretzel salt
Instructions
- In a large bowl, combine warm water and sugar. Sprinkle yeast over the top and let sit for 5 minutes until foamy.
- Add melted butter and salt. Stir in flour gradually, mixing until a sticky dough forms.
- Knead on a lightly floured surface for 5-7 minutes until smooth and elastic. Adjust with water or flour as needed.
- Place dough in a greased bowl, cover, and let rise in a warm spot for about 30 minutes until doubled in size.
- While dough rises, bring water to a boil in a large pot. Slowly stir in baking soda.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Punch down risen dough and divide into 24 pieces. Roll each into a rope about 4 inches long.
- Wrap each rope around a cocktail sausage, pinching the ends to seal.
- Using a slotted spoon, dip each wrapped sausage into the boiling baking soda bath for 30 seconds. Remove and place on the baking sheet.
- Brush each pretzel pig in a blanket with beaten egg and sprinkle with coarse salt.
- Bake for 14-16 minutes, rotating the pan halfway through, until deep golden brown and firm.
- Let cool on the pan for 5 minutes. Serve warm with dipping sauces like mustard or cheese.
